El Vapor (Santa María, Dota)

This women- and family-led farm carries on a deep propose in the mountains of Dota. Officially starting their own micro-mill in 2020, Mayra Solís and her kids stepped away from big commercial co-ops to do things their own way, blending generations of traditional farming with modern, experimental methods like their anaerobic natural coffees.

By putting the planet first, the family makes sure every single harvest protects the environment. They've even set aside nearly 90% of their land as a protected primary forest, which helps safeguard a natural water spring for their local community.

Deeply committed to the people who make their coffee possible, they have also worked with the same indigenous family from Panama for over a decade to harvest their crops.

Anaerobic Process

A great cup begins with a seed. After two years of growing on the coffee tree, the ripe cherries are handpicked.

The whole cherries are placed into sealed tanks without oxygen and fermented for 48 hours, allowing their natural sugars to develop sweetness, bold flavors and complexity.

The beans are dried, rested, milled, and shipped.

Small-batch Roasting

We roast in small batches to bring out better flavor and ensure your coffee arrives fresh.

Smaller batches allow us to fine-tune the roast curve, adjusting heat and timing with precision so each bean develops its natural sweetness and aroma.

Eco-friendly Packaging

Our coffee now comes in PCR (Post-Consumer Recycled) bags, giving a second life to plastics and keeping waste out of landfills.

They reduce our carbon footprint while providing an absolute oxygen barrier to keep your microlots fresh.

Deliveries arrive in kraft boxes.

Once empty, recycle them.
