The Roast
How fresh is your roast?
We roast in small batches to guarantee you always receive exceptionally fresh coffee.
1) The Roast Date (Production Date)
Every bag features a roasting date marked as the Production Date (P).
2) High-Altitude Density (1,600+ Meters)
All of our beans are grown exclusively at extreme elevations of 1,600 meters and above. At these cool, high altitudes, coffee cherries mature much slower, resulting in SHB (Strictly Hard Bean) classification.
This slow growth produces exceptionally dense beans packed with complex sugars, vibrant acidity, and rich, layered flavor profiles that simply cannot be replicated at lower elevations.
3) The Degassing Phase (Why Rest Matters)
Freshly roasted coffee naturally traps carbon dioxide inside the beans. Because our single-origin lots are high-altitude SHB (Strictly Hard Bean) varieties, their extreme cellular density locks in these gases far tighter than standard commercial beans.
As a result, they require an extended degassing window, typically 7 to 14 days post-roast, to release trapped C02. Brewing too early prevents water from reaching the soluble compounds; allowing proper rest guarantees a balanced, full-flavor extraction.
4) The Peak Flavor Window (8–12 Weeks)
Thanks to this same structural density, SHB coffee ages gracefully and holds its freshness far longer than softer beans.
To experience the vibrant tasting notes and delicate aromatics of our microlots at their absolute prime, we advise consuming your beans within 8 to 12 weeks of the roast date. This extended sweet spot gives you ample time to enjoy the coffee's complete, complex profile before natural oxidation begins to mute the flavors.
5) Our Freshness & Anti-Waste Promise
We deliver coffee roasted within 21 days or less, dispatching fresh batches as fast as the next day after roasting. Should a batch pass this 21-day window, we offer it at a special discount. These beans are still exceptionally flavorful, perfect for brewing balanced pour-overs, extracting rich shots of espresso, or a smooth cold brew.
The Coffee
Where else can I find the coffee?
Currently you can find our coffee exclusively on our website.
How to handle my coffee?
When handling your coffee, we recommend to use a dry spoon or measuring tool to scoop the beans. Avoid using wet tools that may come into contact with the coffee bag.
Always remember to seal and close the coffee bag after opening to maintain freshness.
Store them in a cool, dry place away from direct sunlight, preferably in a shaded area.
What is the difference between a blend and a single origin?
A blend coffee consists of a combination of coffee beans from various countries or regions worldwide. On the other hand, single origin refers to a batch of coffee sourced from a single producer, crop, or region within the same country.
This distinction allows for unique flavor profiles and the exploration of specific coffee characteristics.
How do you choose the tasting notes of your coffees?
Tarrazú coffee beans are renowned for their exceptional coffee beans and intense coffee profiles. Grown at high altitudes, these beans ripen slowly, absorbing the distinct tastes of the region - rich dark chocolate and critical flavors from the surrounding trees and volcanic soil.
After harvesting, each farmer applies a unique processing method (washed, honey, natural, or anaerobic), further enhancing the bean's flavor.
Roasting, ranging from light to medium and dark, deepens the taste, while extraction methods allow customization to your preference.
At Manural, we're dedicated to offering a truly unique coffee experience. We carefully select three different processes and roast our beans to a balanced medium, allowing you to add your personal touch through your favorite extraction method.
What is an SCA score?
The Specialty Coffee Association (SCA) is an international trade association responsible for cupping and scoring coffees. Licensed by Q Graders (CQI), they use a scoring system ranging from 0 to 100. Coffees scoring from 80 to 84.99 are classified as "Very Good," 85 to 89.99 as "Excellent," and 90 to 99.99 as "Outstanding".
Coffees with scores between 80 and 99.99 are considered Specialty Coffees, which are often known as Gourmet Coffees. These coffees are typically grown at high altitudes, are single origin, and maintain high-quality standards throughout the entire supply chain.

Sustainability
How is Manural supporting Sustainability?
Manural is focused on sustainability from the coffee harvest to the packaging of the products. Our aim is to contribute step by step (bigger or smaller) to economic, social and environmental sustainability on our processes and activities.
We exclusively source from small-scale family farms dedicated to artisanal specialty coffee, never mass-produced.
We work only with producers committed to natural, slow drying (no mechanical drying) and regenerative practices that give back to the soil: shade-grown canopies, polyculture (biocultivos), minimal chemicals (no drone spraying), and circular practices designed to eliminate waste and reuse all farm resources.
Why is sustainability in coffee important?
Industrial coffee farming relies on clear-cutting and fast mechanical drying, which depletes soil nutrients and flattens flavor.
Regenerative farming protects the soil and elevates cup quality:
- Natural Soil Nutrition: Shade trees drop organic matter that naturally fertilizes the soil and retains groundwater, reducing the need for chemicals.
- Richer, Sweeter Beans: Shade canopies and polyculture create cooler microclimates, allowing cherries to ripen slowly and develop higher natural sugar content.
- Flavor Protection: Slow, natural sun-drying preserves the seed's structure and locks in delicate aromatic compounds that machine drying destroys.
Are your bags eco-friendly?
Absolutely! Our coffee now features Post-Consumer Recycled (PCR) packaging. By using recycled materials, we minimize waste while keeping your coffee fresh, offering packaging that is both functional and environmentally responsible.
